Veggie-Packed Quinoa Salad

Ingredients:

• 1 cup quinoa, cooked

• 1 cup cherry tomatoes, halved

• 1 cup cucumber, diced

• 1/2 cup red bell pepper, diced

• 1/2 cup red onion, finely chopped

• 1 cup chickpeas, drained and rinsed

• 2 tablespoons olive oil

• Juice of 1 lime

• 2 tablespoons Cobb & Cobbs Salt-Free All-Purpose Seasoning

• Fresh parsley, chopped (optional)

Instructions:

1. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, bell pepper, red onion, and chickpeas.

3. Pour the dressing over the salad and toss well.
